Oyster Mushroom and Spinach Stir-Fry

Ingredients:
1 cup Sun-Dried Oyster Mushrooms (rehydrated and sliced): These unique mushrooms, known for their rich umami flavor, are first sun-dried to enhance their taste and then rehydrated to restore their original texture. Ensure that they are sliced evenly to allow for consistent cooking and flavor absorption.
2 cups fresh spinach: Fresh spinach adds a vibrant green color and a nutritious element to the dish. It is packed with vitamins A, C, and K, as well as iron and antioxidants, making it not only delicious but also a healthy choice. Choose tender leaves for the best texture.
1 tbsp sesame oil: This oil brings a nutty flavor and aroma to the dish, enhancing the overall taste profile. It is important to use high-quality sesame oil for the best results. This ingredient also adds a lovely sheen to the finished dish.
2 garlic cloves, minced: Fresh garlic adds a robust flavor and aroma that complements the mushrooms and spinach beautifully. Mince the garlic finely to ensure it disperses evenly throughout the dish, providing a burst of flavor in every bite.

Instructions:
Heat sesame oil in a large pan over medium heat. Once the oil is shimmering, add the minced garlic and sauté until fragrant, being careful not to let it burn, which would impart a bitter taste. This step is crucial as it forms the aromatic base of the dish.
Add the rehydrated and sliced sun-dried oyster mushrooms to the pan. Cook for approximately 5 minutes, stirring occasionally, until the mushrooms are tender and have absorbed the flavors of the garlic and oil. Next, toss in the fresh spinach along with the soy sauce. Stir gently to combine all the ingredients.
