Ingredients:
1 cup dosa batter - This batter is the foundation of the dish, made from fermented rice and urad dal, which gives it a unique flavor and texture. The fermentation process not only enhances the taste but also makes it easier to digest.
1/2 cup Sun-Dried Milky White Mushrooms (rehydrated and finely chopped) - These mushrooms add an earthy flavor and a chewy texture to the uttapam. To prepare them, soak the sun-dried mushrooms in warm water for about 30 minutes until they become plump and tender, then chop them finely to distribute their rich taste throughout the dish.
1/4 cup onions, finely chopped - Onions provide a sweet and savory flavor to the uttapam. When chopped finely, they will caramelize beautifully during cooking, adding depth to the overall taste.
1/4 cup tomatoes, finely chopped - Tomatoes contribute a juicy freshness and acidity that balances the richness of the mushrooms and the dosa batter. Their vibrant color also enhances the visual appeal of the dish.
Instructions:
Step 1: "Begin by heating a dosa tawa or a non-stick skillet over medium heat. It is essential to ensure that the surface is adequately heated before adding the batter, as this will help achieve a crispy texture. Once hot, pour a ladleful of dosa batter onto the tawa and gently spread it into a thick, round circle, ensuring that the edges are slightly thicker for a better hold of the toppings."
Step 2: "Once the batter is spread, take the rehydrated and finely chopped mushrooms, onions, and tomatoes, and evenly sprinkle them over the surface of the batter. This step is crucial as it allows the vegetables to meld into the batter while cooking, ensuring that each bite is flavorful and packed with texture. Press down lightly with a spatula to help the toppings adhere to the batter."
Step 3: "To enhance the flavor and ensure a golden crust, drizzle a little oil around the edges of the uttapam. This oil will help in achieving a crispy bottom while cooking. Allow the uttapam to cook undisturbed for several minutes, monitoring the base until it turns a beautiful golden brown. This process will create a delightful contrast between the soft interior and the crispy exterior."
Step 4: "Once the base is perfectly golden, carefully flip the uttapam using a spatula, taking care to maintain its shape. Cook for an additional 1-2 minutes on the other side, allowing the toppings to cook through and meld with the batter. The final result should be a beautifully cooked uttapam that is crispy on the outside and soft on the inside. Serve hot with your favorite chutney, such as coconut chutney or tomato chutney, to complement the flavors and add an extra layer of taste to this delicious dish."
