Ingredients:
1 cup Sun-Dried Milky White Mushrooms (rehydrated)
These unique mushrooms, known for their delicate flavor and chewy texture, are first sun-dried to enhance their umami profile. When rehydrated, they absorb water, regaining their original form and becoming a delightful addition to various dishes. Ensure they are soaked in warm water for about 30 minutes to achieve the best texture.
1/2 cup yogurt
The yogurt serves as a creamy base for the marinade, adding a tangy flavor while also helping to tenderize the mushrooms. Opt for plain, unsweetened yogurt to maintain the savory profile of the dish. Greek yogurt can be used for a thicker consistency.
1 tsp ginger-garlic paste
This essential ingredient combines the aromatic qualities of both ginger and garlic, providing a fragrant and flavorful backbone to the marinade. It adds depth and complexity to the dish, enhancing the overall taste experience.
1 tsp turmeric powder
Known for its vibrant yellow color and health benefits, turmeric not only adds a warm, earthy flavor but also contributes to the dish's visual appeal. It is a staple in many cuisines and is celebrated for its anti-inflammatory properties.
1 tsp red chili powder
This spice introduces a gentle heat and vibrant color to the dish. Adjust the quantity based on your spice tolerance; using Kashmiri red chili powder can provide a milder flavor while still adding a beautiful hue.
1 tsp garam masala
A quintessential spice blend in Indian cooking, garam masala adds warmth and complexity with its mix of spices, which can include cinnamon, cardamom, and cloves. It elevates the dish, providing a fragrant finish that complements the mushrooms perfectly.
1 tbsp lemon juice
The acidity of lemon juice brightens the flavors of the marinade, balancing the richness of the yogurt and the earthiness of the mushrooms. It also adds a refreshing zing that enhances the overall taste profile.
Salt to taste
Salt is crucial for enhancing the flavors of all ingredients. Adjust according to personal preference, ensuring that it brings out the best in the marinade without overpowering the other flavors.
Skewers for grilling
Wooden or metal skewers can be used to hold the marinated mushrooms together during the cooking process. If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning on the grill or in the oven.
Instructions:
Begin by marinating the rehydrated mushrooms in a mixture of yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, lemon juice, and salt. Ensure that the mushrooms are thoroughly coated with the marinade, allowing the flavors to infuse deeply. Cover the bowl with plastic wrap or a lid and let it sit in the refrigerator for at least 1 hour, though longer marination can enhance the flavor even more, ideally up to 4 hours.
After marination, take the mushrooms out and carefully skewer them onto the skewers. If desired, you can alternate the mushrooms with pieces of bell peppers, onions, or cherry tomatoes for added flavor and color. Preheat your grill or oven to a medium-high temperature. Grill the skewers for about 10-15 minutes, turning occasionally until the mushrooms are golden brown and slightly charred, which will enhance their flavor and texture. If baking, place the skewers on a baking tray lined with parchment paper and bake for approximately 20 minutes, flipping halfway through.
Once cooked, remove the skewers from the grill or oven and let them rest for a couple of minutes. Serve the grilled mushrooms hot, accompanied by a side of refreshing mint chutney. The coolness of the chutney perfectly complements the spicy and tangy flavors of the mushrooms, creating a delightful contrast that will tantalize your taste buds.
