Creamy Mushroom Pasta

Ingredients:
1/2 cup Sun-Dried Shiitake Mushrooms (rehydrated and finely chopped to enhance texture and flavor absorption)
1/2 cup Sun-Dried Oyster Mushrooms (rehydrated and sliced thinly for better integration into the dish)
2 cups cooked pasta (preferably a shape that holds sauce well, such as fettuccine or penne, to ensure each bite is flavorful)
1 cup heavy cream
1/4 cup grated Parmesan
2 garlic cloves, minced
2 tbsp olive oil
Instructions:
Begin by heating the olive oil in a large skillet over medium heat. Once the oil is shimmering, add the minced garlic and sauté it gently until it becomes fragrant and golden, which should take about 1-2 minutes. Be careful not to burn the garlic, as this will impart a bitter taste to the dish.
Next, add the rehydrated and chopped shiitake mushrooms along with the sliced oyster mushrooms to the skillet. Sauté the mixture for approximately 5 minutes, stirring occasionally, until the mushrooms are tender and have released their moisture. This step is crucial as it enhances the flavor profile of the mushrooms, allowing them to caramelize slightly, which adds depth to the overall dish.
Once the mushrooms are cooked, carefully pour in the heavy cream, stirring to combine all the ingredients. Allow the mixture to come to a gentle simmer. Continue to cook for about 5-7 minutes, or until the cream has thickened slightly, creating a luscious sauce that will cling beautifully to the pasta.
After the sauce has reached the desired consistency, add the cooked pasta directly into the skillet. Toss everything together gently but thoroughly, ensuring that the pasta is evenly coated with the creamy mushroom sauce. Sprinkle in the grated Parmesan cheese, mixing well until the cheese melts and integrates into the sauce, adding a delightful creaminess and flavor.
Finally, taste the dish and adjust the seasoning if necessary, adding salt or pepper to your preference. Once everything is well combined and heated through, serve the pasta warm, garnished with additional Parmesan if desired, and perhaps a sprinkle of freshly cracked black pepper or chopped parsley for a touch of color and freshness.
